In a large bowl, mix together the pumpkin, flour, egg, nutmeg, salt, and pepper until a dough forms.
Turn the dough out onto a floured surface and knead it for a few minutes until it becomes smooth and elastic.
Divide the dough into 4 equal pieces, and roll each piece out into a rope about 1/2 inch thick. Cut the rope into 1/2 inch pieces.
Bring a large pot of salted water to a boil.
Gently drop the gnocchi into the boiling water, and cook for 2-3 minutes or until they float to the surface.
Drain the gnocchi and toss them with your favorite sauce.
You can serve the gnocchi with a simple butter and sage sauce, or with a rich, cheesy sauce made with cream, parmesan, and nutmeg. You can also add a little bit of sautéed garlic and chopped parsley to the dish before serving, it would give more flavor and fragrance.
You can also experiment by replacing some of the flour with other types of flour like whole wheat or semolina flour to give the gnocchi a different texture.
