Pumpkin Gnocchi

Ingredients
  

  • 1 cup cooked and mashed pumpkin
  • 2 cups all-purpose flour
  • 1 egg
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, mix together the pumpkin, flour, egg, nutmeg, salt, and pepper until a dough forms.
  • Turn the dough out onto a floured surface and knead it for a few minutes until it becomes smooth and elastic.
  • Divide the dough into 4 equal pieces, and roll each piece out into a rope about 1/2 inch thick. Cut the rope into 1/2 inch pieces.
  • Bring a large pot of salted water to a boil.
  • Gently drop the gnocchi into the boiling water, and cook for 2-3 minutes or until they float to the surface.
  • Drain the gnocchi and toss them with your favorite sauce.
  • You can serve the gnocchi with a simple butter and sage sauce, or with a rich, cheesy sauce made with cream, parmesan, and nutmeg. You can also add a little bit of sautéed garlic and chopped parsley to the dish before serving, it would give more flavor and fragrance.
  • You can also experiment by replacing some of the flour with other types of flour like whole wheat or semolina flour to give the gnocchi a different texture.
