Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract and beat until well combined. Add the eggs, one at a time, beating well after each addition.
Pour the cheesecake mixture over the crust and smooth the top with a spatula.
Bake for 45-50 minutes, or until the center is set.
Cool the cheesecake to room temperature, then chill in the refrigerator for at least 2 hours.
Top the cheesecake with kiwicoulis just before serving.
